Coffee Pancakes

Coffee and breakfast go hand in hand. That is why we think mixing up a batch of our Kenyan Coffee Pancakes to enjoy alongside a cup of Growers Alliance coffee is one of the best ways to start your day! 

Enjoy this quick and easy recipe for a delicious batch of Kenyan Coffee Pancakes.

Pancake Ingredients

  • 1/2 cup brewed Growers Alliance Kenyan coffee
  • 1/2 cup whole milk
  • 1 1/2 cup white flour
  • 3 tsp baking powder
  • 1 tbsp white sugar
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 whole egg
  • 3 tbsp butter melted (plus 1 tbsp for cooking)

Instructions

  1. In a large bowl, combine flour, baking powder, sugar, and salt. 
  2. Whisk the coffee, milk, vanilla, melted butter, and egg with the dry ingredients until the batter is smooth. If your batter is exceptionally thick, you can add an additional tablespoon or two of milk until you reach your desired consistency. 
  3. Heat a buttered pan or griddle at low heat.
  4.  Scoop about 1/4 cup of batter onto the pan or griddle. 
  5. Cook each side for about 2 minutes or until the edges are golden. 

Once you have finished making your stack of pancakes, we suggest topping them with powdered sugar, whipped cream, maple syrup, or even some fresh fruit!
